Eba and Vegetable Soup with Meat, also known as Efo Riro, is a delicious and popular dish in Nigeria. It combines the goodness of Eba, a dough-like side dish made from cassava flour, with a rich and flavorful vegetable soup. Here's a simple recipe to make Eba and Vegetable Soup with Meat:

### Ingredients for Eba:
- 1 cup cassava flour (garri)
- Water (as needed for mixing)
- Salt (to taste)

### Ingredients for Vegetable Soup:
- 2 cups of meat (beef, chicken, or goat meat)
- 1 medium onion, chopped
- 2-3 tomatoes, blended
- 2 cups of mixed vegetables (spinach, kale, or bitterleaf)
- 1 cup of palm oil
- 2 bouillons or seasoning cubes
- 1 teaspoon of ground crayfish (optional)
- 1 teaspoon of ground pepper
- Salt (to taste)
- 1 tablespoon of ground dried shrimp (optional)
- 1 cup of water

### Instructions for Eba:
1. Measure out the cassava flour into a large bowl.
2. Gradually add water to the flour and stir continuously until you achieve a smooth and consistent paste. The paste should be thick but still pourable.
3. Place the mixture in a pot and bring to a boil over medium heat.
4. Stir the paste with a wooden spoon until it starts to thicken.
5. Reduce the heat to low and continue to stir for about 5-7 minutes until the Eba forms a solid mass and starts to pull away from the sides of the pot.
6. Add a bit of salt to taste and stir well.
7. Remove from heat and let it cool. Once cooled, mold into small balls with your hands.

### Instructions for Vegetable Soup:
1. Wash and cut the meat into bite-sized pieces.
2. In a pot, heat the palm oil over medium heat until it is hot but not smoking.
3. Add the chopped onion and cook until it is translucent.
4. Add the blended tomatoes and cook until the oil separates from the mixture and it thickens.
5. Add the meat to the pot and stir well to mix with the tomato sauce.
6. Cook until the meat is browned and the sauce has darkened in color.
7. Add the seasoning cubes, ground crayfish, and ground pepper. Cook for a few minutes more.
8. Pour in the cup of water and allow the soup to come to a boil.
9. Reduce the heat and let the soup simmer until the meat is tender.
10. Wash and cut your vegetables into small pieces and add them to the soup.
11. Cook for about 10 minutes until the vegetables are tender.
12. Adjust the seasoning with salt to taste.

1. Serve the hot Eba with the vegetable soup with meat.
2. Use a wooden spoon to make an indentation in the Eba to hold the soup.
3. Use your hands to break off small pieces of Eba and use it to scoop the soup into your mouth.
